The Polycarpou family has been making traditional, farmhouse Cypriot cheeses since the 18th century. Based in Avdimou, a region renowned for cheese-making, their dairy farm benefits from the area’s unique climate, vegetation, and livestock, all of which give their PDO halloumi cheese its special flavour.

Polycarpou Sheep & Goat halloumi

The Polycarpou family farm, located in the village of Prastio (Avdimou), is home to around 2,000 Chios sheep, a breed originally from the Greek island of Chios. Imported to Cyprus in 1968, these sheep have adapted to the local environment and have been bred in pure flocks to enhance the local indigenous sheep population. Known for their early maturity, non-seasonal breeding, high prolificacy, and superior milk production, the Chios sheep are ideal for intensive sheep farming. The Polycarpou family’s legacy in cheese-making and livestock dates back to the early 18th century, with the family continuing the tradition of producing high-quality Cypriot cheese products using the same time-honored techniques passed down through generations. The farm benefits from the rich Cypriot flora, ideal weather conditions, and the unique qualities of the local sheep, which contribute to the exceptional flavor and quality of their products. All products, including 100% sheep Halloumi and mixed sheep & goat’s Halloumi, are handmade with care using the family’s own milk and carefully selected fresh mint, resulting in authentic, premium-quality cheeses that reflect the area’s rich dairy heritage.
