Nestled in the foothills of the Italian Alps, Mauri Formaggi has been crafting traditional Valsassina cheeses since 1920, preserving a legacy that spans over a century. Founded by Emilio Mauri in the picturesque village of Pasturo, the original factory still stands as the heart of the business, though production has expanded beyond its walls. Today, the fifth generation of the Mauri family blends time-honored cheesemaking techniques with cutting-edge technology, ensuring that each product embodies the highest standards of quality and authenticity. With a commitment to excellence, the family has maintained the integrity of their craft, using locally sourced fresh milk to create cheeses that honor both tradition and innovation.

One of the most distinctive aspects of Mauri Formaggi is the unique maturation process carried out in the purpose-built caves beneath the Grigna mountain. These natural caves, ventilated by the pure, fresh air of the surrounding Alps, provide the perfect environment for aging their signature cheeses, including Taleggio and Gorgonzola. Known as ‘Stagionata in Grotta,’ this traditional cave-ripening technique has earned Mauri recognition as the last cheesemaker still using these natural caves. The cool, humid conditions and constant airflow ensure a slow and consistent maturation, resulting in cheeses with unmatched depth of flavor and character. Mauri’s commitment to preserving this rare practice highlights the company’s dedication to craftsmanship and the enduring heritage of Italian cheesemaking.
