A.P. Polycarpou & SonsĀ  is a family-run Cypriot dairy with a cheese-making heritage dating back to the 18th century. Nestled in the village of Prastio (Avdimou), their farm is home to over 2,000 Chios sheep, whose rich milk reflects the region’s unique flora & contributes to the exceptional flavour of their PDO-certified halloumi. Handcrafted using time-honoured techniques and infused with mint, their cheeses embody the authentic taste of Cyprus.
