La Casa Del Formaggio

Gerardo and Rosa Cicchiello both belonged to dairy farming families who came from the Benevento region of Italy and migrated to Australia in the 1960s. They met in Adelaide, married soon after, starting a family and going onto open a cheese making business. Rosa was soon making Ricotta using the same recipe that she grew up with back on the farm in Italy. Their children Claude and Marisa joined the family business in the early 90’s.

La Casa Del Formaggio sources fresh milk from local family farms in South Australia and still uses traditional, hands-on cheese-making techniques perfected over the generations. The La Casa Del Formaggio cheesemakers still transform this local milk into Italian style fresh cheeses today just as Gerardo and Rosa did over 50 years ago.
