Roquefort PDO is made exclusively from raw sheep’s milk and is the only soft raw milk cheese imported to Australia. Carles is one of the smallest and most respected of the remaining Roquefort producers and cheesemaker Delphine still matures cheese on wooden shelves in the cellars beneath the village church. According to PDO regulations, only the milk of the local Lacaune sheep can be used and maturation takes place in the village of Roquefort-sur-Soulzon in the region of Occitania in southern France.
Carefully selected for its soft and creamy texture and balance of rich, sweet, salty savoury flavours, every batch is slightly different depending on the season.
