Whilst the true origin of Shropshire Blue has been debated, everyone agrees that it was never made in Shropshire and that it is a modern cheese, first made in the late 20th century. Annatto gives the cheese its characteristic orange hue; a striking contrast to the thin blue veins that extend through the paste. Hand- ladled curds that are set using non-animal rennet are key to developing an elegant texture and nutty flavour that culminates with a delicate blue spice in the finish.
