In 1988, from his home in Mordiallic, Victoria, Paolo Facchino started making cheeses inspired by his Italian childhood. He developed his own recipes and combined these with cooking techniques his mother Lucia had taught him. His style of Mediterranean cheeses were not yet readily available in Australia at this time and word soon spread and so did the demand for his cheese. Ten years later the Fresh Cheese Company was formed, when in July 1998, Mamma Lucia Cheese merged with Puglia Cheese. From these humble beginnings, the business has grown and today the Fresh Cheese Company employs approximately 90 staff and processes nearly 70,000 litres of milk per day. Puglia Mozzarella is a fresh, pear-shaped, stretched curd cheese with a smooth, soft texture and sweet, milky flavour. Excellent melting and stretching properties make it a perfect choice for pizza and pasta dishes.
