Locally sourced milk from pasture-fed cows gives the cheese a rich, yellow, colour whilst the texture is firm, yet not dry or crumbly, and the flavour is full and smooth. Its free flowing nature and excellent melting properties make it a versatile cheese suitable for a variety of dishes.
Alba Cheese was founded by Sicilian born brothers Mario and Gaetano Bongiorno who brought their traditional cheese making knowledge and skills from Sortino.
