Jasper Hill hand-selected this cheddar for graceful cave-ripening at their cellar in upstate Vermont. It was released when the perfect balance of texture and flavor were achieved; bright and deeply brothy with a salt-caramel finish and supple texture.
A major investment at Jasper Hill Farm was the construction of a series of cheese maturation cellars or ‘vaults’ which involved excavation into the surrounding hills. Vault 5 Aged Cheddar is named after its location during maturation.
