Cabot Creamery is a cooperative making a range of cheddars in Vermont, USA. Collecting milk from 1200 family-run dairy farms in the New England region, this is the original home of Cheddar making in the United States. Most of the cooperative’s cheese production is in block form with varying flavour and age profiles. One of Cabot’s vintage range of cheddars, this Extra Sharp recipe is aged for 10 months. During this time, a sweet and tangy flavour develops with a crumbly texture.
