Holstein Friesians graze on the lush pastures of Somerset and Dorset producing rich, creamy milk which is transformed, on the farm, into this PDO-accredited cheddar, (Protected Designation of Origin).
Only a handful of traditional cheddar producers remain in the West Country and most make handcrafted truckles, bound in cloth and aged in cellars where the cheese reflects the change of seasons.
This cheese is one of the few produced using old-fashioned methods but formed into a block. The result is a consistent cheese; easy to handle and balanced in flavour, reflecting the characteristic cheddar profile that the region is known for.
