Typical of a Dutch Gouda, Coolea it has its own characteristics. With hints of hazelnut, butterscotch and honey this is a rich cheese with a fruity tang.
Dick and Helene Willems moved from Holland to County Cork, Ireland in the late 1970s. They started making Coolea on their own farm as a hobby in 1981, and the business was fully established by 1986.In 1998 their son Dick junior took over cheesemaking.
The milk used is exclusively from the Friesian herd on the farm.Whilst Coolea is typical of a Dutch Gouda, it has its own characteristics. Matured for up to 12 months, it is a rich nutty cheese with a fruity tang and sweet, caramelly flavours. Rich with hints of hazelnut, butterscotch and honey.
