Pecorino Toscano Stagionato PDO hard sheep’s milk cheese made in Tuscany. PINZANI Dairy was established by the Pinzani family in the beautiful Tuscan Hills around Sienna, sourcing milk from local shepherds within the PDO region. Now owned & operated under the Granarolo group, it remains a small facility just making PDO Tuscan Pecorino and sheep’s milk ricotta on a seasonal basis.
Aged for over four months, the cheese develops a fragrant flavour whilst the texture gradually becomes dense and flaky with a slightly sweet finish. Complex flavours of sweet and savoury highlight the quality of this classic cheese.
