L’Artisan Raclette is a semi hard pressed cheese with a natural rind. Maturated on oak boards, the rind is washed regularly to encourage b.linens to develop, which assists the development and flavour. After 3 months, the raclette develops a semi-hard texture, smooth paste and robust flavour with nutty notes and a buttery finish. As befits the name, raclette is traditionally served melted which highlights its savoury characteristics.
