Rispens is a hard sheep’s milk cheese crafted from the milk of Lacaune sheep, the renowned breed traditionally used for Roquefort production. The sheep graze in the coastal Friesland region in the north of the Netherlands, where the maritime landscape contributes to the character of the milk.
The cheese opens with grassy aromas and notes of dried hay, balanced by a delicate buttermilk creaminess. As it fully matures, it develops rich flavours of brown butter, toasted nuts, warm spices and golden toast, supported by a smooth, dense paste studded with crunchy tyrosine crystals.
Rispens is carefully selected and matured by Betty Koster of L’Amuse, whose passion for traditional Dutch cheeses has earned her international recognition.
