Graham Padfield is a fourth generation dairy farmer.His family has been happily milking cows at Park Farm since 1914.
Today, Graham’s farm is entirely organic and registered with Organic Farmers & Growers.He uses the milk from his herd of 160 Holstein Friesians to make a small range of handmade cheeses, including Wyfe of Bath.
Taking its name from Chaucer’s Canterbury Tales, this English cheese draws on a Gouda recipe for inspiration, although it’s not pressed – rather gently drained in cloth-lined baskets which mark each springy-textured wheel. Succulent with nuances of hazelnut and a creamy finish, this elegant cheese displays the rich, organic milk of Park Farm.
