Coffee beans and lavender buds are ground together and rubbed into the rind giving this cheese notes of butterscotch and caramel. Beehive Cheese Company creamery sits in the forested Wasatch Mountains in northern Utah where wildflowers are abundant in the summer. Supplementing the feed with alfalfa hay and corn, the Jersey and Holstein herd produce milk that’s perfect for cheese making.
