A modern interpretation of a traditional leaf wrapped cheese from Latteria Perenzin using a method described as affinamento or refining where cheeses are refined in leaves or hay.
Latteria Perenzin is located near the town of Conegliano in the Veneto region of Italy, and sources goats milk from the Italian & Austrian Alps. This pure goat’s milk cheese is wrapped in leaves from local walnut trees which impart a delicate herbaceous character to the cheese as it matures. The resulting cheese has rich fruity flavours with savoury overtones. The name translates as Capra – goat, Foglia – leaf, Noce – walnut.
