In the heart of the basements of a former textile factory, the Losfeld family has been refining Northern cheeses since 1871. Originally from Holland this distinctive orange rind cheese is coloured with annatto and was introduced to France when Flanders was part of the country.
The cheeses selected by Calendar Cheese are made by the Isigny St Mere co-operative and are matured for up to two years. During this maturation the rind becomes pock marked by mites and the texture hardens to become quite brittle.
The flavour is mellow with a fruity nutty tang. The cheese is often used as an aperitif or for grating at this age
