Made by Fromagerie Guilloteau in the foothills of the French Alps, this cheese is produced using a unique ultrafiltration technique that retains proteins, fat and minerals in the paste. This makes it naturally richer in calcium and other minerals than other soft cheeses.
Named after the French word for countryside “campagne”, Campagnier is a washed rind cheese with a deep amber colour that comes from annatto, a South American plant.
Campagnier ripens with home-made lactic ferments for up to three weeks under this thin orange-tinted rind. The cheese then develops a silky smooth texture with a delicious d’Affinois flavor.
Campagnier is suitable for vegetarians, naturally gluten and lactose free (lactose < 0,1g /100g).
