Product Description

Tunworth is a camembert-style cheese characterised by truffley, garlicky and vegetal flavours and a creamy and unctuous paste. Created by cheese makers Stacey Hedges and Charlotte Spruce in Hampshire, the cheese is named after the local village of Tunworth. Whilst reminiscent of its French cousin, Tunworth is markedly different thanks to the lush grazing of rural Hampshire and the use of full fat milk – Normandy camembert tradition stipulates some cream is skimmed from the milk for butter making. The whole process is done by hand, from the cutting to the ladling. From the cheese making room, the newly born cheeses are put into the ripening rooms where they start growing their mixed coats of wrinkly Geotrichum and delicate white Penicillium, and then wrapped in waxed paper and boxed in poplar boxes. The final product has a soft and thin rind and inside, the creamy white paste has a distinctive vegetal aroma and an earthy fragrance of freshly cut mushroom.
