Gippsland Brie is made at the Tarago River Cheese Company at their purpose built dairy designed for surface-ripened cheeses. The fresh curds are gently hooped, then matured at 14°C over the next 4 weeks where a pristine, velvety white rind develops over the cheese. The paste is soft and buttery, becoming creamier with age.
