Jensen’s Red

Description

Made at Hillcrest Farm in the Gippsland, Victoria this soft cows’ milk cheese takes its name from cheesemaker Laurie Jensen. A traditional surface ripened cheese it develops texture and flavour as it ripens over a period of two months.
The distinctive dusty orange rind is encouraged to develop a combination of moulds and ‘b’ linens by regular washing and maturation in underground cellars.
When fully mature the cheese develops a strong smell, however the flavour is mild and creamy with a hint of eucalyptus.
