Lynher Dairies, owned by Catherine Mead OBE, is home to Cornish Yarg and Cornish Kern. Every single truckle comes from the small, rural dairy in mid Cornwall and the lush pasture rich milk from carefully selected neighbouring farms.
Yarg owes its name to a moment of sweet inspiration. Bodmin Moor farmer Alan Gray first produced it in the 1980s after finding a 17th century recipe for nettle wrapped cheese in his attic. Spell his surname backwards and you will discover how this cheese got its name.
Yarg is a delicate, cow’s milk cheese with mild curdy-yoghurty flavours . Cornish Yarg tends to have a fluffy textured centre with lactic flavours and a buttery, creamy breakdown under the slightly earthy edible rind. It is hand wrapped in nettle leaves giving it a striking appearance and a beautiful white bloom appears on these dark green leaves when mature.
