Lynher Dairies, owned by Catherine Mead OBE, is home to Cornish Yarg and Cornish Kern. Every single truckle comes from the small, rural dairy in mid Cornwall and the lush pasture rich milk from carefully selected neighbouring farms.
In Cornish, ‘Kern’ means round and its also the first four letters of Kernow, the Cornish word for Cornwall.
Cornish Kern,is made in the same open vats as Yarg and, like Yarg, is pressed and brined. Then Kern is coated in a protective, breathable black wax like rind and is matured for between 14 and 18 months. The use of alpine style starter cultures encourages the sweet, bright and nutty flavours to come through.The resulting cheese is quite flaky and almost dry with a savoury-sweet, smooth, and nutty flavour.
