Established in 1970, Casa Madaio has its roots firmly centred in the heart of the National Park of Cilento and Vallo of Diano, near the Amalfi Coast.
Paglierino is a semi-hard sheep’s milk cheese that is aged for up to 3 months. Its ivory-white interior is compact and dense, with slight elasticity in the mouth and scattered tiny irregular holes throughout. Aromatically complex, its flavour is mild and sweet with a great depth and magnificent long finish.

Note: Casa Madaio is a company of traditional cheesemakers in the heart of the Cilento National Park. Many of their cheeses are matured in the natural caves around Castelcivita.
