This unusual goats’ milk log from the Castille-Léon region in the North of Spain is ripened using penicilium roqueforti, the same mold used to make Roquefort. However, rather than piercing the cheese in traditional blue cheese production, blue mold develops on the rind of the cheese, creating complex flavors and a distinctive appearance.
The dark, wrinkled rind slowly ripens the creamy white interior and encourages the development of a strong and very distinctive goat flavour with a hint of blue. The flavours gets bigger and bolder with age, becoming rustic, earthy & barnyard-like.
