After careful maturation of up to one year, the wheel develops a rustic, terracotta-coloured rind. The paste is compact and pliable. The sweet, fruity, and lactic flavour finishes with a slight hint of caramel – perfect with roasted nuts on a cheese board and a fine selection for your fondue recipe.
