The curd for these ‘little devils’ is stretched and formed by hand into a traditional pear-shape called ‘scamorza’.
Made in Melbourne by That’s Amore, Giorgio Linguanti produces a range of Italian style cheese. A green olive and a slice of red chilli is placed inside each Diavoletti before being cold-smoked over European beechwood. Savoury with a spicy warmth, this interesting cheese can be served as is, grilled or pan fried.
