Semi hard goat’s milk cheese from a micro dairy on the Mornington Peninsula. Since 2008, Main Ridge Dairy has handcrafted a range of farmhouse goat’s milk cheeses from their small herd of Saanen and Toggenburg goats. Grazing on the gently sloping hills surrounding the dairy, they are milked twice a day, with the milk travelling only a couple of hundred metres to the dairy where it is transformed into cheese.
Selected cultures are used and before the bacteria can create too much acidity, the curds are washed with purified rainwater. This retains the milk’s natural sweetness, and the resulting caramel flavour complements the delicate goat’s milk and the smooth texture of this porcelain white cheese.
