A surface ripened goat’s milk cheese styled on the traditional cheeses of St Maure de Touraine, France. Slightly crumbly when young, the paste softens as it matures, becoming creamy under the rind with a delicate goat’s milk flavour and notes of roasted almond. The piquant rind is dusted with vegetable ash that provides a striking contrast to the white cheese within.
