Annatto infused brine imparts a bright orangey-red colour to the thin and sticky rind. Originally from the French Alps, Matthieu values the importance of ‘terroir’ in the cheese making process to reflect the local environment and selects the finest organic milk from family owned dairies in the South West of Victoria.
This deep coloured washed rind cheese contains a dense paste that slowly breaks down to a rich, unctuous texture as it ages. With a savoury, meaty flavour this cheese has both strong aromas and robust flavours.
